Baked Purple Sweet Potato Fries with Banana Ketchup

Ingredients
2 large purple sweet potatoes, scrubbed, cut lengthwise into ½-inch-thick slices, then sliced ½-inch thick
plus 1 teaspoon olive oil, divided
1 garlic clove, minced
2 tsp minced shallots
1/2 tsp grated fresh ginger
1/4 tsp ground allspice
1/8 tsp ground turmeric
1 large banana, mashed
1 Tbs apple cider vinegar
1 Tbs tomato paste
Directions

1. Preheat oven to 450°. Spray rimmed baking pan with cooking spray. In large bowl, toss potatoes and 1 tablespoon oil; spread in single layer on prepared pan. Bake 20 minutes, turning once; turn broiler to high. Broil fries 3 minutes or until golden brown and crisp; sprinkle with salt and pepper to taste.

 

2. In medium skillet, heat remaining 1 teaspoon oil over medium-low heat. Add garlic and shallots; cook and stir 1 minute. Add ginger, allspice and turmeric; cook and stir 1 minute. Add banana, vinegar, tomato paste and ¼ cup water; cook and stir 5 minutes or until slightly thickened. Transfer to small bowl; refrigerate 10 minutes. Makes about ¾ cup.
