Ingredients
1 Tbsp. vegetable oil
1 large green bell pepper, finely chopped
1 cup finely chopped cooked ham
1/4 cup finely chopped onion
2 Tbsp. chopped green onions
1 Tbsp. chopped garlic
2 large tomatoes, chopped
1 can (15 oz.) pigeon peas, rinsed and drained
5 cups water
2 Tbsp. Knorr® Granulated Bouillon Chicken or 2 Knorr® Chicken Bouillon
½ tsp. annatto or achiote paste (optional)
2 cucharadas de vinagre de vino tinto
2 cups uncooked rice
1/4 cup chopped fresh cilantro
Directions
  1. Heat oil in large heavy saucepan or Dutch oven over medium-high heat and cook green pepper, ham, onion, green onions and garlic, stirring occasionally, 3 minutes or until vegetables are crisp-tender.
  2. Reduce heat to medium-low and stir in tomatoes and pigeon peas. Cook, stirring occasionally, 2 minutes.
  3. Stir in water, Bouillon and annatto (if using) and bring to a boil over high heat, stirring to dissolve Bouillon.
  4. Stir in rice and cilantro; reduce heat to low and simmer covered 20 minutes or until rice is tender.
  5. Garnish, if desired with sliced green onions.
