Ingredients
1/3 cup Canola Oil
3 Egg Whites
1/2 cup Sugar
1 tsp Vanilla Extract
1/4 cup Puréed Spinach
1/4 cup Puréed Blueberries
1/2 cup All-Purpose Flour
1 Tbs Unsweetened Cocoa Powder
1 tsp Salt
1/4 cup Semi-Sweet Chocolate Chips
Directions
  1. Preheat oven to 350°F. Coat an 8x8-inch baking pan with nonstick baking spray.
  2. In a large bowl combine oil, egg whites, sugar, vanilla, spinach pure´e and blueberry pure´e; mix well.
  3. Stir in flour, cocoa powder, salt and chocolate chips; mix well.
  4. Spread batter evenly in baking pan.
  5. Bake 30 to 40 minutes or until a toothpick inserted into the center comes out clean.
  6. Let cool in pan on a wire rack.
  7. Cut into squares, and serve.
