Ingredients
4 cups fresh or frozen corn
Wholesome Pantry olive oil spray
1 red onion, diced
2 jalapenos, seeded and chopped
½ cup fresh cilantro chopped
¼ cup fresh lime juice
1 ½ tsp Bowl and Basket Elote Seasoning
¼ cup Bowl and Basket plain yogurt
½ cup crumbled cotija cheese
Directions

1.Spray a large skillet with olive oil spray and heat over high heat. Add corn and cook for 5-7 minutes, stirring occasionally but letting the corn char. Remove from heat and set aside to cool slightly.

 

2. Once cooled, add to a large bowl and combine with the remaining ingredients. Stir until well combined.

 

3. Top with additional cilantro and cotija cheese before serving, if desired.
