Arepas con Queso

Ingredients
2 cups precooked corn flour
2 ½ cups warm water
1 tsp salt
1 cup shredded Bowl & Basket Monterey Jack Cheese with Jalapeno Peppers
1 tbsp Bowl & Basket vegetable oil, for cooking
Directions
- Whisk together the corn flour, salt and warm water until well combined. Let sit for 5 minutes (mixture will thicken) and then knead into a smooth dough by hand.
- Divide the dough into 12 equal portions and roll each into a smooth ball.
- Flatten the dough balls into approximately 5-inch disks, using either a tortilla press or two plates. NOTE: to avoid sticking, place the dough between two pieces of parchment paper before flattening.
- Add approximately 2 tbsp shredded cheese to the center of one flattened disk, then top with another disk and gently press the edges to seal them together, making one arepa. If mixture seems to stick to your hands, wet your hands with a little water before sealing the edges.
- Repeat until you have 6 fully formed arepas.
- Heat oil in a large skillet over medium heat. Once hot, add 1 – 2 arepas (however many will easily fit without crowding them) to the pan and cook approximately 3-4 minutes per side or until browned and fully cooked.
- Remove from heat and repeat until all arepas are cooked.
- Let cool 5 minutes then serve!
