Ingredients
1/4 Pack Rice Noodles
4 Blue Dragon Vietmanese Spring Roll Wrappers
Handful - Mint, Cilantro
Romaine, Chopped
1/2 cup Cucumbers, matchstick-cut
1/4 cup Carrots
12 pre-cooked shrimp, tails removed
Directions

1. Cook 1 nest of rice noodles according to package directions; refresh under cold water and drain; set aside.

 

2. Using one at a time, place wrapper into hot water until it is soft and pliable (about 5-10 seconds).

 

3. Remove wrapper from water and blot on a damp tea towel.

 

4. Arrange lettuce, noodles, carrot, cucumber, and 3 mint leaves, in the middle of the wrapper. Above that, place 3 cilantro leaves and 3 shrimp in a row.

 

5. Fold wrapper around lettuce and noodles, then continue rolling to cover shrimp. Fold in the sides of the wrapper and then continue to roll upwards to form a log shape.

 

6. Serve with a side of Blue Dragon Thai Sweet Chili Dipping Sauce.
