Ingredients
1/2 cup pomegranate
1/4 cup dijon mustard
1/3 cup grainy mustard
1 cup honey
1/4 cup apple cider vinegar, for glaze
3 cups savoy cabbage, thinly cut
1/4 cup apple cider vinegar, for slaw
1/4 cup extra virgin olive oil
2 scallions, thinly sliced
Salt and pepper, to taste
Directions

For Glaze:

  1. Reduce pomegranate juice (bring to a simmer over medium heat and cook for 15-20 minutes)
  2. Remove from heat and let cool
  3. Whisk the dijon mustard, grainy mustard, honey, and apple cider vinegar into the reduced pomegranate juice
  4. Pour and brush generously onto ham prior to roasting

For Slaw:

  1. Add the savoy cabbage and scallions to a large bowl.
  2. In a small bowl, whisk together the apple cider vinegar and extra virgin olive oil.
  3. Pour the dressing over the cabbage mixture and toss until well coated.
  4. Season with salt and pepper to taste.
  5. Let sit for 10–15 minutes before serving so the flavors can come together.

Chef Tip: Add ham, honey mustard, and slaw to a freshly baked biscuit for a delectable sandwich option!
